Stunningly colourful striped shells with a pearly white interior. The impressively deep cup and uniform shape are due to the regular hands-on approach by the local Irish fishermen. Hatchery seed is organically grown in the low intertidal zone of Dingle Bay, where the nutrient-rich rivers from the Lakes of Killarney National Park meet the Wild Atlantic Ocean in an idyllic location along the Ring of Kerry.
The Irish Special is characterised by its high meat content and perfect balance between soft and sweet. These are thanks to the nature of the bays where they are grown. These waters are rich in plankton and minerals: essential nutrients for the oyster. The constant flow of the Atlantic Ocean around the island helps give each oyster its perfect drop shape, with a very strong shell and a smooth, pearl-like white sheen.
Ireland has a very long history of oyster-growing: oyster shells and fossils dating back 5,000 years have been found on Irish beaches. Oysters are a major staple of Irish cuisine, and oysters can be enjoyed in many pubs, restaurants and market stalls, often accompanied by a pint of black Irish stout.

Obvious green apple and cucumber with a hint of salted hazelnuts. Sweet as well as salty. A thoroughly enjoyable experience.

Oisrí is an Irish Oyster company founded by TLS Group Merchants. In the Irish language, Oisrí translates to ‘Oyster’, reflecting the purity and quality of the product. TLS Group Merchants was founded by the O’Sullivan family who have been farming mussels and oysters in Cromane for over 100 years. Along with Tony O’Sullivan, third-generation oyster farmer FionánWalsh and John O Shaughnessy, the company’s dedicated efforts allow us to proudly present their specialty oysters from Cromane.
