Fine de Claire
These oysters were popular with French bon vivants back in the 17th century already. The Fine de Claire is a well-known French oyster that has undergone its last 'affinage' in the 'claires', found principally in the Marennes-Orléron, Bretagne and La Vendée regions. These claires, which are connected to the open sea, are shallow closable basins in the past used mainly for the production of salt. Thanks to the affinage in the claires, these oysters have a stronger, slightly sweeter taste. The Fines de Claires lie in the claires for one to three months at a maximum density of 20 oysters per square metre and have a meat percentage of between 6.5 and 10.5%.

The quality of the oysters depends on many factors, over some of which the grower can exercise little control. World of Oysters maintains contact with a group of selected growers concerning the situation in the cultivation beds. This allows us to offer a constant quality of Fine de Claire oysters throughout the year.

This unique Dutch oyster of exceptional quality is cultivated by the Dhooge Family (Oesterij) in Lake Grevelingen and the Eastern Scheldt. Due to the vulnerability of the Ostrea Edulis species, this oyster requires a lot of attention and care from the grower. The Dutch Imperial brand is a selection of the best flat oysters from the oyster farms in the Zeeland waters in the Netherlands. After careful selection, grading and checks, it is sold to well-known hotels and restaurants all over the world.
This full, creamy Dutch oyster is grown in specially designed oyster baskets attached to oyster racks. This gives the oyster its lovely, deep shape. As the Oosterschelde is among the cleanest waters in the world, and we grow both diploid and triploid oysters, these oysters are available in top quality and with their unique taste all year round. Special de Claire
The Special de Claire is a well-known French oyster that has undergone its last 'affinage' (ripening process) in the 'claires'. This oyster stays in the claires for longer than most of its predecessors: namely 2 to 6 months, with a maximum density of 10 oysters per square metre.
